秘魯胭脂樹(shù)籽
胭脂樹(shù)籽(安納托)又稱“婀娜多籽”,是原生于熱帶美洲的灌木胭脂樹(shù)(Sa 的種子,可作為香料和著色劑。這種樹(shù)籽用途廣泛,可作多種 熟食的配料,使用地區(qū)從墨西哥南部延伸到南美洲北部。胭脂樹(shù)籽外殼的 蠟質(zhì)涂層含有胭脂木酯,這是種鮮紅橙色的色素,很容易變成各式化學(xué)物 質(zhì),分別呈橙、黃、紅等不同色澤,其中有些可溶于水,有些則為脂溶性 物質(zhì)b大型食品制造廠使用胭脂樹(shù)籽萃取液,為切達(dá)乳酪、奶油等制品染上鮮明色彩。胭脂樹(shù)籽的質(zhì)地堅(jiān)硬,很難磨成細(xì)粉,因此通常都置人液體 加熱蘋(píng)取其風(fēng)味和顏色,之后再撈出。市面上也有磨碎后制成的胭脂樹(shù)籽 糊。胭脂樹(shù)籽的主要香氣來(lái)自于帶木質(zhì)、干燥氣味的萜烯類蛇麻草酮,這 也是啤酒花(蛇麻花)的成分之一。
